On September 17, 2007, CME Group will launch options on Dry Whey futures on the CME Globex electronic trading platform. Electronic trading hours for these contracts will be the same as for other commodity products: trading begins Monday at 9:05 a.m. Central Time (CT) and remains open through Friday 1:30 p.m. with daily hour-long trading halts at 4:00 p.m.

CME Dry Whey options are based on cash-settled CME Dry Whey futures. Dry whey is the liquid that separates from milk when cheese is made. It is used in a variety of foods – crackers, breads, cereals and commercial pastries, energy power bars and protein drinks. The futures contract, at 44,000 pounds, provides market users with price protection and a mechanism for price discovery.
